Slow cooker pork fillet with beer and veggies

The beer is the key to this simple but delicious slow cooker recipe. Add your favourite spices to give it a different flavour. This recipe is very flexible! And best of all, the leftovers can be used for stew or sandwiches.

Ingredients
Serves: 6

  • 1kg whole pork fillets
  • 175ml lager
  • 2 tablespoons white wine vinegar
  • 2 potatoes, quartered
  • 2 carrots, quartered
  • 6 button mushrooms
  • 2 cloves garlic
  • 1/2 small onion, cut into chunks
  • 1 1/2 teaspoons salt
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon dried sage

Method
Prep:10 min Cook:4 hr Ready in:4 hr 10 min

  1. Combine the pork, lager, vinegar, potatoes, carrots, mushrooms, garlic, onion, salt, peppercorns and sage in a slow cooker. Cover and cook on low for 4 hours.

Altered ingredient amounts. Cook for 8 hours, not 4. My potatoes were still raw after 4. Fry onions first. Add spices. -  19 Feb 2011

I made this dish as directed...it was very bland and not pleasant to eat. The directions were sketchy...I put it on HIGH for 4 hours and it was a good thing I did...the potatoes were just past cooked...I would not recommend this as it was written. -  08 Mar 2009 (Review from Allrecipes US | Canada)
